Snowflake Macaroons - Nov 28th, 2014
As soon as the first snowflakes hit the ground, my wife gets right to heating things up. That means a lot of baking. This week our Facebook fans told us they really wanted to see a cinnamon roll cookie recipe. We delivered, and my wife made these super yummy Cinnamon Swirl Sweeties. Since she had to wait for the dough to chill for those, she used the time to make a batch of Snowflake Macaroons. Both of these sweet treats are going to be great additions to our Christmas cookie gift tins.
Here’s what you’ll need to make my wife’s Snowflake Macaroons:
Snowflake Macaroons
Ingredients
- 2⅔ cup of unsweetened, flaked coconut
- ⅔ cup organic cane sugar
- 6 tbsp flour
- ¼ tsp salt
- 4 egg whites
- 1 tsp almond extract
Instructions
- In large bowl, combine coconut, sugar, flour, and salt. Add in egg white and almond extract and mix until thoroughly blended. Drop by teaspoonful onto parchment lined sheet and bake at 325 degrees for 20 minutes, or until edges are golden brown. Remove from cookie sheet and allow to cool on wire racks.
