Stout Your Engine Beer and Bacon Waffles
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1¼ cup whole milk
  • ½ cup Guinness Stout
  • ½ cup vegetable oil
  • 2 eggs, separated
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • ½ cup cooked and diced bacon bits
  1. Separate egg whites and set aside.
  2. Beat yolks until smooth. Add oil and milk. Blend.
  3. Add Guiness and vanilla and stir until well blended.
  4. Mix dry ingredients (flour, baking powder/soda, salt, sugar) in separate bowl. Add dry ingredients to wet ingredients and thoroughly combine.
  5. Beat egg white until stiff peaks form. Fold egg whites into batter.
  6. Stir in diced bacon bits.
  7. Drop approximately 1 cup of batter onto preheated and ungreased waffle iron. Allow to cook for 3-4 minutes, or until golden brown. Remove from heat and serve with butter and Canadian maple syrup.
