Cheese and Date Muffin Biscuits

Ingredients
  • 1 cup milk
  • ¼ cup vegetable oil + 2 tbsp for oiling muffin tin
  • 2 cups flour
  • 1 large egg
  • 3 tbsp organic cane sugar
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 cup white shredded sharp cheddar cheese
  • ½ cup diced dates
Instructions
  1. Preheat over to 400 degrees.
  2. Oil muffin tin.
  3. In a large bowl, blend together milk, egg, and oil.
  4. Add shredded cheese and diced dates. Mix.
  5. In a separate bowl, whisk together remaining dry ingredients: flour, sugar, baking powder, salt.
  6. Add to milk mixture and gently combine. Do not overwork.
  7. Bake for 20 minutes or until toothpick inserted comes out clean.
  8. Allow to sit for 2 minutes before removing from muffin tin.
  9. Serve warm.
