Pumpkin Spice Cashew Cookies
 
Ingredients
  • 1½ cups organic cane sugar
  • ½ cup butter
  • ½ cup vegetable shortening
  • 1 large egg, slightly beaten
  • 1 tablespoon molasses
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1 cup crushed, salted cashews
  • pinch of salt
Instructions
  1. Preheat oven to 350 F.
  2. In large bowl, beat sugar, butter, and shortening until thoroughly combined and fluffy.
  3. Add egg, molasses, and vanilla. Mix well.
  4. In separate bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Add in batches to wet ingredients, until completely combined.
  6. Mix in cashews.
  7. Roll into 1 inch balls and place on ungreased cookie sheet.
  8. Bake 10 - 12 minutes or until edges begin to brown.
  9. Remove and allow to cool for a couple minutes before transferring to wire rack to cool completely.
