Get Lucky Green Salad with Corn Niblets
 
Ingredients
  • 1 large bunch of arugula, washed
  • 1 avocado, diced
  • 2 kiwis, peeled and diced
  • ½ cup pistachios, chopped
  • Handful of parsley, chopped
  • Handful of chives, chopped
  • ½ cup canned sweet corn kernels
Instructions
  1. Prepare all ingredients as instructed and toss together in large salad bowl. Drizzle with a lime vinaigrette or your favourite dressing and serve!
