My Wife Scores (or Cheater Skor Candy Bars)
  • 1 cup of butter
  • 1 cup of brown sugar
  • 1 bag of chocolate chips
  • soda crackers (1 - 2 sleeves)
  1. Preheat oven to 350 degrees. Grease a cookie sheet and line with soda crackers.
  2. TIP: My wife used a generic store brand. You know the kind that says 'salted tops,' but actually only has a few microscopic grains of table salt. She used this brand because she wanted to refine this version by garnishing the tops with coarse sea salt. To achieve the same saltiness without garnishing, simply use a brand like Saltines that does actually have a generous sprinkling of salt on the tops.
  3. Melt butter over medium heat, and add sugar. Bring to a boil for about two minutes (adjust stove top temperature as needed to avoid burning mixture). Once caramel mixture has thickened pour evenly over soda crackers on prepared cookie sheet. Bake for 8 - 10 minutes (watch closely; these burn easily).
  4. Remove from oven once caramel is bubbling. Disperse chocolate chips over caramel and allow to melt. My wife used dark chocolate because she loves the pairing of it with the sea salt and sweet caramel. Spread melted chocolate with a spatula until evenly coated. Place cookie sheet in freezer and allow to set (approx. 30-60 mins). Remove from freezer and break up as you would peanut brittle.
  5. TIP: Turn the pan upside down and run a warm cloth over the back. This will loosen the caramel that seeped through the crackers. Then pound the heck out of the pan to weaken the bond of the caramel to the pan. Turn back over and use a sturdy spatula to break up My Wife Scores into serving size pieces. Store in airtight container in freezer as this dessert tends to melt.
